Cracker Barrel Meatloaf

Cracker Barrel Meatloaf

Ingredients:

2 pounds ground beef

6 ounces onion, chopped

4 ounces bell green peppers, diced

2 eggs

1 teaspoon salt

½ teaspoon freshly black ground pepper

8 ounces diced canned tomatoes

½ cup grated biscuit crumbs

Preparation:

Place all in large bowl, mix completely with gloved hand.

Place all in a loaf pan.

Press down with spoon.

Bake at 300° F in convection oven for 60 minutes. (Increase time in regular oven by about 30 
minutes.)

Remove from oven and invert loaf over 8" wire rack to drain grease and juice.

Spread ½ cup of catsup over loaf.

Cut into portions 5 to 6 oz each and keep warm.

You can combine this excellent recipe with some others from our collection.

Serve 8.

Copycat Recipe

Serves 6

1/2 cup mayonnaise
1/3 cup granulated sugar
1/4 cup whole milk
1/4 cup buttermilk
4 teaspoons lemon juice
1 teaspoon white vinegar
1/4 teaspoon salt
1/4 teaspoon celery seed  
8 cups finely shredded green cabbage
1 cup finely shredded red cabbage
1 cup shredded carrots

Whisk together mayonnaise, sugar, milk, buttermilk, lemon juice, vinegar, salt, and celery seed in a large bowl until sugar is dissolved.Stir in cabbage and shredded carrots. Cover and chill for at least four hours. Stir before serving.

Ingredients:
  • 1 stick of butter
  • 2 pounds of hash browns ( defrosted it frozen)
  • 1 small onion chopped
  • salt and pepper
  • 1 tablespoon of Olive Oil
  • 2 cups of cheddar cheese ( You can also you 1 cup of cheese and use one cup of Velveeta)
  • 1 can of cream of chicken soup ( 10 3/4 ounces)

Instructions:
  1. Preheat oven to 350 – oil or butter a 9×13 pan and chop onions
  2. Melt butter in hot skillet then add onions. Once the onions are browning add the defrosted hash browns and add oil.
  3. Cook until the hash is browning and tender.
  4. Next take a large bowl and mix cheese and soup together.
  5. Place the hash browns in the large bowl with the cheese and mix.
  6. Place mixture into 9×13 pan .
  7. Pop the pan in the oven for 30 minutes or until golden brown.
